We all know truffles are amazing, step them up a notch with this matcha green tea recipe. These truffles are light, decadent and soft. Mild undertones of earthiness balance out the sweetness of the truffle. Great as a post dinner dessert.

Nothing beats a popsicle on a hot summer’s day. Instead of the traditional fruit pops, try this delicious and unique popsicle flavor combo. You might be thinking including avocado would make this weird but the avocado flavor and texture profile works tremendously with the matcha green tea and white chocolate. If you’re feeling fancy and want to impress your pool party guests this summer then you need to try your hand at this recipe. Even the kids will love ‘em (just don’t tell them there’s avocado in it, just attribute the green color to the hulk or something – get creative!)

Ingredients:

For the popsicles
2 large avocados or 3 small avocados
1 can coconut milk
2 tbsp matcha powder
2 tbsp of honey (adjust to taste but you don’t want the mixture super sweet)
1 tsp of pure vanilla extract

For the white chocolate dip
200g good quality fair trade white chocolate
4 tbsp raw organic cacao butter
½ tsp ground vanilla powder (unless your chocolate already contains this)

We gotta say, this flavor combination is even more extraordinary than the avocado, match and white chocolate combo. This dessert is to die for when paired with either a moscato or chardonnay. Although it’s not included in this recipe, we think adding a drop of either lavender or jasmine essential oil will take this dessert to the next level for an unparalleled aroma.

Outer shell
140 grams good quality white chocolate (at least 30% cocoa solids)
About ½ teaspoon matcha – or enough to get a nice pastel green color

For the Filling
1 cup pistachios, shells removed
Pinch of salt
1 tablespoon flavorless oil, but you may need less or slightly more
Pinch or two of matcha
25g icing sugar

KALE CHICKPEA PESTO MATCHA SOBA

We kick off our savory list of matcha recipes with green tea soba noodles. If you’ve never made noodles from scratch before this can be a bit challenging, but it’s definitely fun if you love to cook. Not only do you have a unique tasting noodle but you get beautiful plating as well with this colorful dish. You’ll impress anyone you cook this dish for! It’s also great for the summer.

Ingredients:

Sauce
1 clove garlic
1/2 cup olive oil
1 bunch kale, chopped
1 cup cooked chickpeas
1/2 teaspoon lemon zest
2 tablespoons lemon juice
Salt and pepper to taste

Soba Noodles
1 cup buckwheat flour (preferably Japanese)
7 tablespoons all-purpose flour
1 heaping teaspoon of matcha green tea powder
7 ounces tepid water

1 bunch of asparagus, washed, trimmed, and gently sautéed
1 cup peas, dropped into boiling water for about 30 seconds
